Biography:
Dr. Ankit Paliwal is an Assistant Professor at the School of Sciences, CETVET, Fiji National University. He has over 14 years of expertise in food processing and academia. He holds a PhD in Food Technology with a focus on fermented millet-based products and has published extensively on topics like food processing, kinetics, and modelling. Additionally, he provides technical support to international organisations, including FAO, emphasising food security and sustainable practices. His industrial experience includes roles such as Product Development Consultant and Shift Brewer.
