Unit Name: Food and Nutrition Security
Description: Food and nutrition security exists when all people at all times have physical, social and economic access to food which is consumed in sufficient quantity and quality to meet their dietary needs and food preferences. This course will enlighten you to the necessary knowledge and skills to briefly assess the food and nutrition situation of a community or a household thus providing immediate baseline intervention to reduce food and nutrition insecurity. Intervention such as home food gardening and food preservation methods will be taught in this course.
Learning Target Outcomes: On successful completion of this course, the students will be able to: 1. Explain food and nutrition security terms and concepts. 2. Determine the major causes of food and nutrition insecurity in the Pacific Island Countries. 3. Explain climate change and it\'s effects on the food supply system. 4. Demonstrate an understanding of home food gardening as an approach to food and nutrition insecurity. 5. Demonstrate an understanding of processing and preserving common local Pacific Island foods.
