Unit Name: Food and Nutrition

Description: This course is designed to provide students with the basic knowledge of food and nutrition and will explore the role of food and it\'s significance in society and culture. The course will highlight the nutritive value of foods and food sources that are commonly found in the PICs.

Learning Target Outcomes: On completion of the course, students will be able to: 1. Discuss the significance of food in the Pacific society. 2. Explain the food energy content of macronutrients. 3. Discuss the role, types and classification of macronutrients in food. 4. Explain the functions of micronutrients in foods, food sources and daily requirements. 5. Explain the role of water and major minerals in the body. 6. Illustrate the process of food digestion in the human body.
