Unit Name: Food Safety Management in the Pacific

Description: This course is designed to assist in the improvement of food safety and food security, throughout the life-course, and in support of public health and sustainable development in the Pacific Island nations. As it is, global food industry is already feeling the destabilizing and disruptive effects of climate change, and with the effects of climate change projected to amplify, food industries are becoming increasingly aware of vulnerabilities to their operation which is a direct effect to people in different communities and all walks of life. In light of this devastating impact of the changing in weather patterns and climatic conditions which has affected the prices of food and restrict its supply, it would be sustainable to devise ways that would help our Pacific communities adapt to resilient ways to sustain food supply. Therefore, this course is designed to enable food experts in the Pacific to develop sustainable food safety programs that will be able to sustain the food supply for the future generation of PICs.

Learning Target Outcomes: On successful completion of this course, the students will be able to: 1. Identify major drivers of environmental unsustainability affecting food safety and security. 2. Explain the challenges to food security affecting food safety in the PICs posed by climate change. 3. Apply the sustainability concepts into strategic planning for sustaining food industry security established in the PICs. 4. Demonstrate ways to build capabilities and skills to address food availability, affordability and accessibility for future generations. 5. Apply sustainability methods in locally-based food production and best agricultural practices for safe and secured food supply to the people in the PICs. 6. Develop innovative and suitable means of maintaining safe food supply during disasters such as flooding, tropical cyclones and droughts to the people of the PICs.
