Unit Name: Kitchen Safety Sanitation and Hygiene

Description: This course introduces students to the philosophy, principles and practices of occupational hygiene, including identifying the nature of common hazards in any catering operations. This course is also linked to the cookery course, which also provides students with the skills and knowledge in understanding laws that governs the food operation that provides safe eating environment for its customers.

Prerequisite: N/A

Prerequisite Sentence: The student must have passed form Five [Year 11] or consent from HOS,HOD. For matured students must have relevant number of years industry experience or equivalent.
