Description: The aim of this unit is to introduce students to the control systems required in the Accommodation Operations, Linen control and chemical purchasing controls in the Hotels, restaurants, residential and health-care institutions and the impact of control on the profitability of the establishment through effective costing and the elimination of wastage and pilferage
